Breakfast for Dinner
A Kid-Approved Recipe 😉
In my family, we love breakfast for dinner. During the week it’s usually cereal, waffles, or oatmeal. On the weekends it’s usually pancakes, my kids love alternating between regular pancakes, chocolate chip, banana, and cinnamon. Dinnertime, however, we love making a big breakfast feast once in a while. Here’s one of our favorites, hope you enjoy!
Package of Bacon, cooked and crumbled (save bacon grease in pan for onion)
1 Yellow Onion, chopped and sautéed in bacon grease
1/2 C. Milk
20 oz. bag of Ore-Ida Potatoes O’Brien
2 C. shredded Cheddar cheese, reserve one cup for topping
Salt and Pepper, to taste
- Preheat oven to 350°. Spray a 9 x 13-inch casserole dish with non-stick spray, set aside.
- In a large mixing bowl, combine all ingredients (remember to reserve one cup of the cheese). Pour into prepared casserole dish.
- Bake for 55 minutes. Remove from oven and top with reserved cheese. Return to oven for 8 minutes, or until cheese is melted.
- Allow casserole to rest for 10 minutes (you can use this time to prepare any quick side dish. We love toast and fresh fruit with this). Serve and enjoy!
